There are two different types of jobs to complete across 5 locations in Red Dead Redemption - Horsebreaking and Nightwatch.

If you're aiming for 100% completion in Red Dead Redemption, you'll need to complete 5 specific jobs. There are 3 nightwatch jobs and 2 horsebreaking tasks.

Nightwatch is unlocked immediately after completing the second mission "New Friends, Old Problems" at MacFarlane's Ranch, although you'll need to wait until later in the story before you can attempt it at the other locations.

Horsebreaking is unlocked once you've unlocked the lasso, after completion of "Wild Horses, Tamed Passions".

You won't be able to hogtie criminals in Nightwatch jobs (for better rewards) until you unlock the Lasso.

Nightwatch

The nightwatch jobs are reasonably simple tasks which should take about 5 minutes each. You'll patrol around the area, led by a watchdog who will sniff out trouble, then it's up to you to resolve it by whatever means necessary.

The mission can only be started at night (as the name would suggest!) and it'll appear as a moon icon on the map. You can only do the job once every 24 hours, so you may want to head to your safehouse and save 4 times in a row to fast forward time so you can attempt it again.

Throughout the mission you'll need to stick with the dog, so you can't go running off on your own. It walks faster than you can walk, but slower than you can run which makes it a bit of a pain to keep up with as you'll constantly have to slow down then run to catch back up. You'll end up being assigned one or more of the possible nightwatch scenarios at random.

You'll earn more reward money if you hogtie the criminals, however it's sometimes much quicker and easier to kill them. You don't need to return a hogtied individual to the start point like in the Bounty Hunter missions, however. The game explains "You can leave him here. The local law officers will get this guy".

Once the task has been completed, you're told to "Go to the foreman's office to collect your reward" which is marked by a yellow blip on the radar.

Possible Nightwatch Scenarios

  • Fist Fight: "Break up the fight and capture the criminals"
    • Two men will be brawling in the street. You can hogtie them or scare them off by firing your gun.
  • Cattle Rustler: "Stop the cattle rustler"
    • A man will attempt to steal a cow. He can be killed or hogtied.
  • Horse Thief: "Subdue the horse thief"
    • A criminal will steal a horse, usually by throwing the previous owner from it and then pulling out a gun. He can be killed or hogtied.
  • Coyote: "Kill the coyote"
    • A coyote will attempt to run away with a chicken in its mouth. Kill it before it can escape.
  • Robber: "Subdue the robber"
    • A criminal will be standing over a dead body preparing to loot them. You can hogtie them or kill them.
  • Thief: "Stop the thief"
    • A criminal will rob a civilian. You can hogtie them or kill them, but be careful because they're armed and ready to shoot.
  • Hold up: "Stop the hold up"
    • A criminal holds another man at gunpoint. Kill or capture him.
  • Gang: "Save the woman from the gang"
    • Up to 5 bandits can be found surrounding a woman who is lying on the floor. They can all be hogtied, however there is a very strong risk of being killed, so it's usually easier to just kill them all using Dead Eye.
  • Break-in: "Stop the break-in"
    • A man will be looking through the window of a building. Kill or capture him.

Nightwatch at MacFarlane's Ranch

Nightwatch jobs at MacFarlane's Ranch can be started at the yellow cross in front of the Foreman's Office. You'll usually complete 1 task during the job and they will typically pay up to $60 as a reward.

Nightwatch in Chuparosa

Nightwatch jobs in Chuparosa can be started at the yellow cross in front of the bank. You'll usually complete 2 tasks during the job and they will typically pay around $100 as a reward.

Nightwatch in Blackwater

Nightwatch jobs in Blackwater can be started at the yellow cross at the South end of the town. You'll usually complete 3 tasks during the job and they will typically pay around $120 as a reward.

Horsebreaking

Horsebreaking is introduced to you in the mission "Wild Horses, Tamed Passions". You'll acquire the Lasso on this mission and use it to capture and break 3 wild horses, so you should know what to expect.

When starting a job, you'll see a short cutscene with the ranch hand who will tell you to break the horse.

You're then told to "Get into the corral with the horse to start the job", so head inside and equip your lasso.

Aim and throw the lasso at the wild horse.

Once it's been roped, you'll need to approach it and climb on to begin the 'breaking' phase.

The horse will dance around randomly trying to buck you off, so you need to move the left analog stick left and right to shift your weight in order to stay balanced on the back of the horse.

Breaking a horse takes around 30-40 seconds and you'll essentially just move left and right on the analog stick throughout the task. If Marston is hanging towards the left side of the horse you'll want to move the stick to the right to center him and vice versa. It's not particularly challenging if you try to ignore the horse and spinning camera movements.

Once a horse has been broken it'll stand on its hind legs before standing still.

You'll then need to take it to the nearby stable to complete the job.

You can only attempt the Horsebreaking job once every 24 hours, however you can save your game 4 times (advancing time by 6 hours each time) to attempt it again.

Completing a horsebreaking job will reward Marston with around $7.

It's also possible to unlock horse deeds for purchase by breaking different breeds. You'll usually see a message saying "new items are available for purchase" each time you complete a horsebreaking job, regardless of whether you've unlocked a new horse deed or not.

Horsebreaking at Ridgewood Farm

Horsebreaking jobs at Ridgewood Farm can be started at the yellow cross in front of the corral.

Breaking a horse at Ridgewood Farm is required to unlock a Walton's Gang Outfit scrap.

Horsebreaking in Chuparosa

Horsebreaking jobs in Chuparosa can be started at the yellow cross in front of the corral just outside town.

Completing 5 jobs across the different locations is a requirement towards 100% completion in Red Dead Redemption.
